Cream Cheese Buttermilk Pound Cake
Ingredients:
1 cup (2 sticks) unsalted butter, softened
8 oz cream cheese, softened
2 ¾ cups granulated sugar
5 large eggs
3 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk (or whole milk with 1 tablespoon white vinegar or lemon juice)
1 tablespoon vanilla extract
Instructions:
Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan or two loaf pans.
Tip: You can also make your own cake pan mixture: mix 1/2 cup of shortening, 1/2 cup of oil and 1/2 cup of flour. Use a paper towel to grease the pan and store the remainder in an airtight container.
In a large mixing bowl, beat butter, cream cheese, and sugar together until light and fluffy (about 3-5 minutes).
Add eggs one at a time, beating well after each addition.
In a separate bowl, whisk together flour, baking soda, and salt.
Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour.
Stir in vanilla extract.
Pour batter into the prepared pan. Bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
