Sweet Potato Puff Pastry Hand Pies

These Sweet Potato Puff Pastry Hand Pies take everything we love about sweet potato pie and wrap it in buttery, golden puff pastry. They’re quick to make, freezer‑friendly, and perfect for breakfast, dessert, or a little afternoon treat with coffee. If you’ve got leftover sweet potato pie filling or a can in the pantry, this recipe turns it into something special with almost no effort.

Ingredients

  • 1 sheet puff pastry, thawed

  • 1–1½ cups sweet potato pie filling (recipe below)

  • 1 egg (for egg wash)

  • 1 tbsp water

  • Optional: cinnamon sugar for sprinkling

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment.

  2. Roll out the puff pastry slightly and cut into 6 rectangles (or 9 squares).

  3. Add 1–2 tablespoons of sweet potato filling to the center of each piece.

  4. Fold over, press edges with a fork, and cut a small vent on top.

  5. Whisk egg + water and brush over each pie.

  6. Sprinkle with cinnamon sugar if desired.

  7. Bake 15–18 minutes, or until puffed and deep golden brown.

  8. Cool slightly before serving — the filling will be hot.

Sweet Potato Pie Filling

2 cups mashed cooked sweet potatoes (about 2 large)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup evaporated milk (or whole milk)

2 large eggs

4 tbsp unsalted butter, melted

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger (optional)

1/4 tsp salt

  • Bake or boil sweet potatoes until very soft. Peel and mash until smooth.

  • In a large bowl, whisk together mashed sweet potatoes, granulated sugar, brown sugar, and melted butter.

  • Whisk in eggs, evaporated milk, and vanilla until fully combined.

  • Add cinnamon, nutmeg, ginger (if using), and salt. Mix until smooth and creamy.

Yes. Canned filling works beautifully and makes this recipe extra quick.

Do these freeze well?

Absolutely. Freeze unbaked hand pies on a tray, then store in a freezer bag. Bake from frozen, adding 3–5 extra minutes.

Can I air fry them?

Yes! Air fry at 350°F for 8–10 minutes, checking for golden color.

How do I keep the filling from leaking out?
