Creamy + smoky + slightly spicy with deep beef flavor and a soulful kick.
There’s something special about a meal that feels like home—warm, filling, and made with just enough flavor to bring everyone back for seconds. This Cajun Beef Stroganoff is one of those dishes.
It takes a classic comfort food we all know and love and gives it a soulful twist with bold Cajun seasoning, tender ground beef, and a creamy, savory sauce that hugs every bite of pasta. It’s the kind of meal you make on a busy weeknight but still feels like you put your heart into it.
Around here, meals like this aren’t just about feeding your family. They’re about gathering, slowing down, and finding gratitude in the everyday moments. And this dish? It does all of that in one pan.
Ingredients
1½–2 lbs ground beef
1 tablespoon olive oil (if needed)
1 small onion, diced
1 green bell pepper, diced (Cajun soul touch)
3 cloves garlic (or 1 tsp garlic powder)
2 teaspoons Cajun seasoning (adjust to taste)
1 teaspoon smoked paprika
½ teaspoon black pepper
½ teaspoon salt (adjust later)
2 tablespoons flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard (secret depth builder)
1 (10.5 oz) can cream of mushroom soup (or homemade)
½ cup sour cream
½ cup shredded parmesan (optional but adds richness)
8–12 oz egg noodles (or any pasta you have)
Instructions
1. Brown the Beef
In a large skillet or deep pan:
Cook ground beef over medium-high heat until browned
Drain excess grease if needed
Set aside
2. Build the Flavor Base
In the same pan:
Add onion and bell pepper
Cook 3–4 minutes until softened
Stir in garlic and cook 30 seconds
Add:
Cajun seasoning
Smoked paprika
Black pepper
Let it toast slightly—this is where that soul flavor comes alive.
3. Make the Sauce
Sprinkle flour over veggies and stir well
Slowly add beef broth while stirring (prevents lumps)
Add Worcestershire + Dijon mustard
Stir in cream of mushroom soup
Let simmer 3–5 minutes until thickened.
4. Bring It Together
Return beef to the pan
Reduce heat to low
Stir in sour cream and parmesan
Do NOT boil after adding sour cream. Keep it creamy.
5. Cook Pasta & Combine
Cook noodles separately according to package
Drain and fold into the sauce OR serve stroganoff over noodles for a cleaner presentation
Optional Add-Ins
A splash of heavy cream for extra richness
Mushrooms for a more classic feel
Red pepper flakes for extra heat
Fresh parsley or green onions on top
Serving Ideas
Serve with buttery garlic bread
Pair with simple green beans or roasted broccoli
Add a side salad for balance
Pro Tips
Taste before adding extra salt. Cajun seasoning can be salty
If it gets too thick, loosen with a splash of broth or milk
This reheats beautifully (even better the next day 👀)
FAQ’s
Can I make Cajun beef stroganoff without sour cream?
Yes! You can substitute sour cream with plain Greek yogurt or a splash of heavy cream for a slightly different texture and flavor.
Is Cajun beef stroganoff spicy?
It has a mild to moderate kick depending on your Cajun seasoning. You can easily adjust the spice level by using less seasoning or choosing a mild blend.
Can I make this recipe ahead of time?
Absolutely. This dish reheats very well. Store it in an airtight container in the fridge for up to 3 days and reheat gently on the stovetop or microwave.
What pasta works best for stroganoff?
Egg noodles are traditional, but you can use any pasta you have on hand—penne, rotini, or even spaghetti will work just fine.
Can I make this dairy-free?
Yes. Skip the sour cream and parmesan, and use a dairy-free cream alternative or simply add a bit more broth for a lighter version.
Can I turn this into a one-pot meal?
You can! Add uncooked pasta directly into the sauce with extra broth and let it simmer until tender. Stir occasionally to prevent sticking.
