Crockpot Ground Chicken & Cannellini Bean Stew

I love me a good crockpot meal. For me, coming home to a cozy meal that’s been cooking low and slow all day is pretty darn great. This Crockpot Ground Chicken & Cannellini Bean Stew is one of those recipes you’ll want on repeat. It’s hearty, wholesome, and full of flavor. Made with lean ground chicken, creamy cannellini beans, and a blend of simple seasonings, it’s an easy slow cooker dinner that feels like comfort in a bowl. Pair it with crusty bread or a side salad, and you’ve got a nourishing meal the whole family can enjoy without a lot of fuss.

Crockpot Ground Chicken & Cannellini Bean Stew

Ingredients

  • 1 lb. ground chicken

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 cans (15 oz each) cannellini beans, drained and rinsed

  • 4 cups low-sodium chicken broth

  • 1 can (14.5 oz) diced tomatoes (optional, for extra flavor & color)

  • 1 ½ tsp smoked paprika

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 tsp cumin (optional, for warmth)

  • 1 bay leaf

  • 1 ½ tsp salt (to taste)

  • ½ tsp black pepper

  • 2 cups chopped spinach or kale (optional, stirred in at the end)

  • Olive oil (for browning chicken)

  • In a skillet over medium heat, add 1–2 tsp olive oil.

  • Cook ground chicken until lightly browned, breaking into crumbles.

  • Add onion and garlic, cooking for another 2–3 minutes.

  • Add the browned chicken mixture to the crockpot.

  • Stir in cannellini beans, chicken broth, (tomatoes if using), paprika, thyme, oregano, cumin, bay leaf, salt, and pepper.

  • Cover and cook on Low for 6–7 hours or High for 3–4 hours.

  • About 10 minutes before serving, stir in spinach or kale until wilted.

  • Taste and adjust seasoning with extra salt or pepper if needed.

  • Ladle into bowls and serve with crusty bread, cornbread, or over rice for a heartier meal.
