Rotisserie Chicken Salad

Quick and easy rotisserie chicken salad recipe

This rotisserie chicken salad is one of those recipes that feels like a little kitchen secret. It’s quick, uses simple pantry staples, and stretches a store-bought chicken into a meal that feeds the whole family without spending much at all. Win win! It’s creamy, tangy, and comes together in minutes, making it perfect for those days when you want something homemade but need it to be easy.

Ingredients

  • 1 store-bought rotisserie chicken (about 3 pounds), white and dark meat shredded, then roughly chopped (I put on disposable server gloves to shred the chicken. Makes the job a lot easier).

  • 1 cup mayonnaise (add more if needed for creaminess)

  • 1 teaspoon ground mustard

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • 1 celery stalk, diced

  • 1 bell pepper, diced

  • 2 tablespoons sweet relish

  • Kosher salt and freshly ground black pepper, to taste

  • 6 croissants (or sandwich bread of choice), split

Directions

  1. In a medium mixing bowl, combine the chicken, mayonnaise, ground mustard, paprika, garlic powder, celery, bell pepper, and sweet relish.

  2. Stir until evenly mixed. Taste and season with salt and pepper as needed.

  3. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to blend.

  4. Serve generously on split croissants, bread, or lettuce bowls.
