Lemon Cream Cheese Pound Cake with Blackberry Glaze

This lemon cream cheese pound cake is rich yet bright, with just enough citrus to balance the buttery crumb. Finished with a simple blackberry glaze, it’s a beautiful cake for spring gatherings, holidays, or slow weekends at home..

Ingredients
1 cup (2 sticks) unsalted butter, softened
8 oz cream cheese, softened
1 ¾ cups granulated sugar
4 large eggs, room temperature
2 ½ cups all-purpose flour
½ tsp baking powder
½ tsp salt
Zest of 2 lemons
2 tbsp fresh lemon juice
2 tsp vanilla extract
Blackberry Glaze
½ cup blackberry preserves or blackberry coulis (strained if seedy)
¾–1 cup powdered sugar
1–2 tsp lemon juice (optional)
Instructions
Preheat oven to 325°F. Grease and flour a tube pan very well.
In a large bowl, cream butter and cream cheese until smooth and fluffy, about 3–4 minutes.
Gradually add sugar and beat until light and pale.
Add eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together flour, baking powder, and salt.
Add dry ingredients to the batter in two additions, mixing just until combined.
Stir in lemon zest, lemon juice, and vanilla.
Spoon batter evenly into prepared tube pan and smooth the top.
Bake 75–85 minutes, tenting loosely with foil if browning too quickly.
Cake is done when a long skewer inserted near the center comes out clean.
Cool in pan 20 minutes, then invert and cool completely.
Make the Blackberry Glaze
Whisk blackberry preserves and powdered sugar until smooth and pourable.
Add lemon juice if desired.
Drizzle over the fully cooled cake.
