Gigi’s Potato Salad
Creamy, flavorful, and easy to make, Gigi’s potato salad recipe is the perfect side dish for picnics, barbecues, and family dinners. Ingredients
5 pounds red potatoes
6 large, hard-boiled eggs, cut into quarters
1/2 red onion, finely diced
1/2 green bell pepper, finely diced
2/3 cup sweet pickle relish
1/2 cup yellow mustard
1/2 teaspoon ground mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika (plus extra for garnish)
1/2 teaspoon celery seed
3 to 4 cups mayonnaise
Salt and freshly ground black pepper, to taste
Directions
Place the potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 20–25 minutes depending on size. Drain well. Once cool enough to handle, cut into quarters. You can leave the skins on for more texture or peel them if you prefer a smoother salad. My family prefers the skins on.
In a large mixing bowl, stir together the pickle relish, both mustards, garlic powder, onion powder, paprika, celery seed, and 3 cups of mayonnaise. Add the eggs, onion, and bell pepper, seasoning generously with salt and pepper.
Fold the potatoes into the dressing mixture until well coated. If the salad feels too thick, mix in more mayonnaise until it reaches your desired creaminess.
Transfer to a serving dish and sprinkle lightly with smoked paprika for color. Refrigerate until ready to serve, or enjoy right away.
