Crockpot Smoky Chicken & Collard Green Soup

Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs or breasts

  • 1 can black-eyed peas, rinsed

  • 6 cups low-sodium chicken broth

  • 3 cups chopped collard greens (fresh or frozen)

  • 2 cups peeled, diced sweet potatoes

  • 1 medium onion, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1½ tsp smoked paprika

  • 1 tsp dried thyme

  • 1 tsp liquid smoke

  • ½ tsp black pepper

  • Optional: 1 tbsp apple cider vinegar or hot sauce (added at the end)

  • Optional: fresh parsley, chopped

Instructions:

  1. Add all ingredients to crockpot except vinegar/hot sauce.

  2. Cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and vegetables are soft.

  3. Remove chicken, shred with two forks, return to pot.

  4. Stir in vinegar or hot sauce (optional). Serve warm.
