Creamy Roasted Tomato Basil Soup
Yields: ~10 small servings (or 6 bowls)

Ingredients
2 (28 oz) cans whole or diced tomatoes, drained slightly
1 medium onion, chopped
4 cloves garlic, minced
2 tbsp olive oil
3 cups vegetable broth
½ cup heavy cream (or half & half)
½ cup fresh or dried basil (2 tsp dried = ½ cup fresh)
1 tbsp tomato paste (optional for richness)
1 tsp sugar
Salt and pepper to taste
½ tsp smoked paprika
Instructions
Heat olive oil in a pot over medium heat. Add onion and garlic; cook until fragrant and translucent, 3–4 minutes.
Add canned tomatoes, broth, tomato paste, sugar, and seasoning. Simmer 15–20 minutes uncovered.
Use an immersion blender (or countertop blender) to puree until smooth.
Stir in cream and basil, then simmer 5 more minutes. Adjust salt and pepper to taste.
Drizzle with cream or top with parmesan and croutons.
