Vegetarian Garden Pasta

This Vegetarian Garden Pasta is the kind of meal that’s simple, comforting, and full of color. Roasted vegetables (use what you have on hand), tender pasta, and a light tomato-herb sauce come together for a dish that feels cozy without being heavy. It’s easy, flexible, and perfect for weeknights or sharing at the table.

Bright, roasted veggies tossed in herb oil and light marinara, full of color and flavor.

Ingredients

  • 4 oz penne or ziti

  • ½ cup zucchini, diced

  • ½ cup bell peppers, diced (mix colors)

  • ½ cup mushrooms, sliced

  • ¼ small red onion, chopped

  • 1 Tbsp olive oil

  • ½ tsp Italian seasoning

  • Salt & pepper to taste

  • ½ cup marinara sauce

  • 1 Tbsp Parmesan (optional)

  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the instructions.

  2. Toss vegetables with olive oil, Italian seasoning, salt & pepper. Roast at 400°F for 15–20 minutes.

  3. Heat marinara in a skillet. Stir in roasted veggies.

  4. Add cooked pasta & toss gently.

  5. Garnish with Parmesan & basil.
