Vegetarian Garden Pasta
This Vegetarian Garden Pasta is the kind of meal that’s simple, comforting, and full of color. Roasted vegetables (use what you have on hand), tender pasta, and a light tomato-herb sauce come together for a dish that feels cozy without being heavy. It’s easy, flexible, and perfect for weeknights or sharing at the table.
Ingredients
4 oz penne or ziti
½ cup zucchini, diced
½ cup bell peppers, diced (mix colors)
½ cup mushrooms, sliced
¼ small red onion, chopped
1 Tbsp olive oil
½ tsp Italian seasoning
Salt & pepper to taste
½ cup marinara sauce
1 Tbsp Parmesan (optional)
Fresh basil for garnish
Instructions
Cook the pasta according to the instructions.
Toss vegetables with olive oil, Italian seasoning, salt & pepper. Roast at 400°F for 15–20 minutes.
Heat marinara in a skillet. Stir in roasted veggies.
Add cooked pasta & toss gently.
Garnish with Parmesan & basil.
