Stuffed Bell Peppers (Vegetarian & GF)

Ingredients

For the Peppers

  • 5 large bell peppers (red, orange, or yellow)

  • 1 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

For the Filling

  • 1½ cups cooked long-grain rice (white or brown)

  • 1½ cups roasted sweet potatoes, small dice

  • 1 cup black beans, rinsed and drained

  • ½ cup onion, finely diced

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp dried thyme

  • ¾ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp olive oil

  • 3 tbsp vegetable broth or water

  • 2 tbsp chopped fresh parsley (optional)

Instructions

  • Preheat oven to 375°F.

  • Slice peppers in half lengthwise and remove seeds.

  • Brush lightly with olive oil and season with salt and pepper.

  • Arrange cut-side up in a baking dish, cover loosely with foil, and bake 15 minutes to soften slightly.

  • Heat olive oil in a large skillet over medium heat.

  • Sauté onion for 3–4 minutes until soft.

  • Add garlic and cook for 30 seconds.

  • Stir in rice, sweet potatoes, black beans, spices, salt, and pepper.

  • Add vegetable broth and cook 2–3 minutes until warm and cohesive.

  • Remove from heat and fold in parsley, if using.

  • Remove peppers from oven.

  • Fill each pepper half generously with the filling.

  • Cover loosely with foil and bake 20 minutes.

  • Remove foil and bake an additional 10 minutes until heated through and lightly golden on top.
