Smoked Sausage Stir Fry
I made this smoked sausage stir fry as a quick dinner solution using what I already had on hand and that’s exactly why it’s become a favorite. When your pantry and freezer are thoughtfully stocked, pulling together a satisfying meal doesn’t require a trip to the store or a complicated plan. Simple staples like smoked sausage, frozen or pre-packaged vegetables, rice, and a basic sauce make it easy to whip up nourishing, no-stress dinners even on the busiest nights.
Ingredients
1 cup uncooked brown rice
2 cups water (or low-sodium broth, optional)
1 tablespoon vegetable oil
12–14 oz smoked sausage, sliced into rounds or half-moons
1 (12–16 oz) bag pre-packaged stir fry vegetables
3–4 tablespoons soy sauce (adjust to taste)
½ teaspoon black pepper (optional)
½ teaspoon garlic powder or onion powder (optional)
Instructions
Rinse rice under cold water.
In a medium saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 40–45 minutes, or until tender. Fluff with a fork and set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add smoked sausage and cook for 4–5 minutes, stirring occasionally, until lightly browned and heated through.
Add the stir fry vegetables directly to the skillet with the sausage.
Cook for 5–7 minutes, stirring often, until vegetables are tender-crisp.
Pour soy sauce over the sausage and vegetables.
Sprinkle with black pepper and garlic or onion powder if using. Stir well and cook for 1–2 more minutes.
Spoon cooked brown rice into bowls and top with the smoked sausage stir fry.
Serve warm.
Optional Variations
Add a drizzle of sesame oil for extra flavor
Sprinkle with red pepper flakes for heat
Toss everything together with the rice in the skillet for a one-pan finish
