Vanilla Pound Cake with Cinnamon Cream Cheese Filling

This vanilla pound cake with a cinnamon cream cheese filling is one of those recipes that feels a little special without asking too much of you. It’s buttery, simple, and familiar. It’s the kind of cake you bake when you want something homemade to share, slice, and enjoy slowly.

Ingredients
Pound Cake Batter
1 cup (2 sticks) unsalted butter, softened
1 ¾ cups granulated sugar
4 large eggs, room temperature
2 cups all-purpose flour (I love using this flour in all of my cakes)
½ tsp baking powder
½ tsp salt
½ cup whole milk
2 tsp vanilla extract
Cinnamon Cream Cheese Filling
6 oz cream cheese, softened
⅓ cup granulated sugar
1 tsp cinnamon
1 tsp vanilla extract
Instructions
Preheat oven to 325°F. Grease and flour a loaf or bundt pan well.
In a small bowl, mix cream cheese, sugar, cinnamon, and vanilla until smooth. Set aside.
Cream butter and sugar in a large bowl until light and fluffy (3–4 minutes).
Add eggs one at a time, mixing well after each.
In a separate bowl, whisk flour, baking powder, and salt.
Add dry ingredients to batter alternating with milk, beginning and ending with flour. Stir in vanilla.
Pour half the batter into the prepared pan.
Spoon cream cheese filling evenly over the batter. Gently spread - do not mix.
Top with remaining batter. Use a butter knife to lightly swirl once or twice (optional).
Bake 60–70 minutes, or until a toothpick inserted comes out clean.
Cool in pan 15 minutes, then turn out and cool completely.
Optional Simple Glaze (Totally optional but oh so good!)
1 cup powdered sugar
1–2 tbsp milk or cream
Splash of vanilla
Drizzle once cake is fully cooled.
Storage
Store covered at room temperature for 2 days
Refrigerate up to 5 days
Freezes well (unglazed) up to 2 months
